Soup beans and Cornbread

Today has been a cold, comfort food kind of day. I also had a ham bone from my Christmas ham in my freezer. I really wanted soup beans and cornbread. So let’s see what we can do about that!

Cooking beans in a pressure cooker removes the lecithins which can be inflammatory for some people. This process allows me to enjoy beans on occasion. I do not eat them a lot, but today I really wanted soup beans.

Eat What You Love Review #3

Here we are again. Ready for week #3’s review? If you are are new here, I am working my way through Danielle Walker’s Eat What You Love cookbook. You can fine Review 1 and Review 2 here.

Before I get into it though, let me say this. I do have more recipes ready to post as well. Last week just kind of turned into a crazy week and I ran out of time. So watch for new recipes to come!

Chicken Casserole

During this time of quarantine, I have been trying hard to use up things that were in the pantry. I generally don’t have a ton of “extra” things in the pantry, as far as meal prep foods, but there were a few. One thing I kept putting aside was a box of dressing mix. I am not sure why it was there. Maybe I bought it as a quick extra in case it was needed at Thanksgiving???? I am not sure, but anyway it was there.

I use to would have just made Chicken Casserole with it, as my “men” love it, but what would I eat? Yes, I could have just pulled one of my “freezer meals” (I will make myself individual meals and put in the freezer when I have leftovers, so I always have an option should I need it quickly.) but that just wasn’t settling with me.

Food Prepping

I know me…and I also know that when things are busy, it is much easier to just grab something to eat. If you have to clean/prepare it first…probably not happening. Enter…Food Prep.

I do not usually do this the same day I go to the grocery. It’s usually just too much for one day. Normally it is the day after. I clean and prep ALL my fresh produce, boil eggs for the week, and my husband always fries my turkey bacon for the week for me. (I hate frying bacon, it takes…forever…He, however, loves it! Says it is relaxing for him. Far be it from me to hinder his relaxing time! LOL)

Peppermint Milkshake

You remember 10+ years ago when the “Shamrock Shake” from McD’s tasted good? It has been a few years since I have had one of theirs, but the last time I did, I remember thinking, “what happened to this? This is nasty!” But it is one of my memories I have of my mom. Her and I always looked forward to March for Shamrock Shakes. Then I discovered Arby’s Mint Milkshake…OH.MY.WORD! It is the bomb milkshake! Saturday my family was traveling, and stopped at an Arby’s for a couple of them to use the facilities…LOL I seen the big poster on the window and oh how I wanted that milkshake! I resisted. It really wasn’t hard. I know what will happen to me if I eat/drink that, and it’s so not worth it. But it does stir up the emotions, and the memories.

Yesterday afternoon, I came home and attempted to make my own! Let me say here, before I give you all the recipe. Not all of these things are 100% compliant on Wahls Protocol. They are all paleo, but you are going to take in more sugar than is allowed on WP. Also, I consider things like this a treat and only RARELY indulge in them. Also keep in mind, I have been on this Lifestyle change for over a year. The first few months I did not allow myself any of these indulges. If you want to call them “cheats” you may. I however, do not say I’m “cheating”. Because I do not allow myself ingredients I have banned. I do have ingredients I “watch” and “extremely limit”. To me…feeling good is worth way more than how anything tastes. All that aside…Here is what I used:
