Eat What You Love Review 1

My first weeks review of the recipes we tried from Danielle Walker’s Eat What You Love cookbook. Tune in next week, for more!

  • Cowboy Cookies~ page 276~ AAAMMMAAAZING! David actually loved these…a lot! They truly are delicious! (These are egg free for anyone that needs that option!) I will be keeping these in my freezer stash!
  • Beef and Broccoli~page 182~Ok, first there is something you need to know about me. You better set down. I am NOT a steak lover. I do not like ANY kind of meat that you have to chew for 3 days before you can swallow it! (Yes, I said 3 days…be glad it wasn’t 14…that’s usually my number…LOL) Anyway…make me a steak that is tender and I’m all for it! So, take my review of this one with that in mind. The flavor was awesome! It was very flavorful! My husband and boys really liked it. I think I would like it better with chicken or shrimp, but that’s me. It was fun to make. Also, it called for a flank steak, which I am not 100% sure, but we used a round steak that we had in the freezer from our beef. We think they are similar if not the same thing. Will I make it again? Most likely…for one thing we have several round steaks to use up…LOL…for another, David loved it. I can always pick out the veggies! LOL Or make some chicken to go with mine.
  • Basic Cauli Rice ~page 309~I made this to go with the Beef And Broccoli above. Except I cheated and used a bag of frozen Caulirice that I already had. But I followed the rest of her recipe. I will attempt making some from scratch eventually, but wanted to use what I had on hand. It is very good, but I think my guys like “fried rice” better.
  • Chocolate-Zucchini Muffins~page 234~These things are so good! Great quick breakfast if you need one. They also freeze well. The only complaint I have is the cupcake papers stick really bad and you lose a lot of muffin…or if you are like me, you look like you are eating the paper, trying to get the muffin off. HA! I think next time, I am going to try to either just put them in a muffin pan with no liners, or silicone liners. If that still doesn’t work, then I may try just making it in a loaf, but either way, these are super yummy! Can eat with butter, or coco whip or just plain!
