Eat What You Love Review #3

Here we are again. Ready for week #3’s review? If you are are new here, I am working my way through Danielle Walker’s Eat What You Love cookbook. You can fine Review 1 and Review 2 here.

Before I get into it though, let me say this. I do have more recipes ready to post as well. Last week just kind of turned into a crazy week and I ran out of time. So watch for new recipes to come!

Without further delay…here’s this weeks review!

Acai Berry-Chia Pudding Parfaits~page 43
I was a little afraid…not sure why, but I was. I was pleasantly surprised. These were very refreshing. Would make a great summer breakfast or afternoon snack! I topped with kiwi, and blueberries.

Buffalo-Stuffed Sweet Potatoes~page 186
Now, I would have never thought to put hot and spicy with sweet potatoes. And to be perfectly honest, I was absolutely scared to serve this to my family. I was already imagining their responses. Yes, I did hear things like, “Who puts buffalo chicken with sweet potatoes?” “hmm???” (before they even tasted it…LOL) But…guys! These were actually GREAT! David said this definitely needed to happen more often. And hint…the dressing…it makes this dish. It’s just not complete without it! It will definitely be on the menu again!

Herb Ranch Dressing~page 92
I was a little hesitant at first and tempted to use my Primal Kitchen Ranch, but since I committed to going through this book…I went with it. And I am so glad I did! This stuff made the Buffalo-Stuffed sweet potatoes dish. I have been using this dressing on my salads since then as well. I really like it! And it was so easy to make!

Sheet-Pan Steak Fajitas~page 223
Now, I did not follow her recipe 100% here. I did use her spices but we first cut a round steak into steak size pieces and grilled them to almost done. I followed the rest of the recipe as in the book. We sliced the steaks into smaller pieces and added them to the pan and broiled with the rest of the ingredients for about 3ish min. We make fajitas regularly around here, and these are very similar, but were way faster! They tasted great! I loved these because they were faster, and clean up was faster!

We have made this so many times…it is one of our favorites! For this particular picture I used cauliflower instead of broccoli, because I had some that needed to be used up.

Animal Crackers~page 83
Now let me tell you about this! These were fun to make. I did use coconut sugar instead of maple sugar…mainly because maple sugar is so expensive! But they turned out fine. freezing the dough for 30 min. was a little too long for my freezer, so keep an eye on your dough. 15-20 minutes probably would have been long enough for my freezer. I had to wait for the dough to “thaw” a bit, or it would just break. I also sprinkled a very small amount of coconut flour over the dough to help keep the cookie cutters from sticking to badly. While these tasted very good, I probably would not make them for me. However, I will make them to keep for the grandbaby! Most of the time she is eating a snack that I cannot eat. She always wants to “share” and I always hate that I can’t “share” with her. These…I can “share” and don’t have to tell her no. She kept asking for more “giaafffs” (giraffes) 🙂 <3
