Taco Rice with Queso

My husband jokes that I am part Mexican. I LOVE Mexican food. I recently revamped a recipe I had found and we loved this! Dairy free, gluten free. If you do not do rice, you could sub cauli rice. This turned out so well!

Taco Rice with Queso

Ingredients

  • 1 lb. ground beef

  • 2 Tablespoons Taco Seasoning

  • 1 cup salsa

  • 1 1/2 cups white rice

  • 3 1/2 cups water or I used beef broth

  • salt and pepper as desired

  • 8 oz. daiya american cheese slices

  • 8 oz. Danielle Walkers Cheese sauce

  • green onions, sliced (optional)

Directions

  • In a large skillet or dutch oven cook ground beef until heated through.
  • Add taco seasoning and stir.
  • Add Salsa, water or broth, rice and cheese slices and stir often to help the cheese melt and keep from sticking.
  • Cook approx 20-25 minutes until rice is tender.
  • Add cheese sauce, stir.
  • Garnish with green onions.
  • Serve with gluten free tortilla chips, or eat as a burrito. Enjoy!
