Roasted Sweet Potato Breakfast

I love making this! It smells SOOOO good while it is baking. I had a similar version of this recipe that just didn’t make a lot of sense to me. It had way to many steps and you ended up with the same results. I simplified it and this is a very easy “meal prep” breakfast!

I just add whatever breakfast meat/protein I have on hand and waalaa…full meal!

There are some flavors here that you may be like…ummm??? Are you sure??? Yes! I am sure! It is a good breakfast!

Roasted Sweet Potato Breakfast

Ingredients:

  • 3 cups brussel sprouts, halved
  • 3-4 sweet potatoes, peeled and diced
  • 4 garlic cloves, chopped/minced
  • 3 apples, cored and diced
  • ½ onion, diced
  • Spray oil
  • Thyme
  • Cinnamon
  • Salt
  • Pepper
  • Nutritional yeast

Directions:

Place the brussel sprouts and sweet potatoes on a sprayed baking sheet.  Spray the veggies with oil. Sprinkle Thyme, Cinnamon, salt, pepper, and nutritional yeast on lightly.  Bake at 350* for 40 minutes.

Put the apples, onion, and garlic on a second sprayed baking sheet.  Spray the apples with oil. Sprinkle cinnamon, salt, and pepper over lightly.  Bake at 350* for 20 minutes.

Mix both together.  I add whatever breakfast meat I have on hand.  Turkey bacon, chicken sausage, compliant sausage, whatever.  I put in individual serving size glass containers, that can be heated in the oven.  Place in the oven in the morning, at 350* for about 10-15 minutes, until heated through
