I know, I know…I haven’t posted in a couple weeks, but let me tell you! It is hard to find a quiet moment to get my thoughts in order when everyone is home all day long. LOL Don’t get me wrong, I have MOSTLY enjoyed everyone being home, and there are parts of it I am going to miss when they all go back. Like, lunch on the back deck with David. Knowing where everyone is and that they are safe…. I hated to not post, but one of the things I have tried to learn, is to enjoy life…enjoy NOW. And If NOW means a post has to wait…this will be over before we know it and I don’t want to look back on this time with a lot of regrets.

That being said. I actually am home alone at the moment and taking full advantage of it. I do have a couple thoughts/things to share with you today.

  2. I have decided to work my way through a couple recipe books, and will post my “reviews” here.

One of the books is my own recipe book. I am going to work my way through and try remaking some of the recipes to make them Paleo compliant so that I can eat them. I am excited about this! I have already edited a few of them and they have turned out so good! This makes me excited to do more and of course I will share them…most of them anyway…with you!

I have also decided to work my way through Danielle Walker’s Cookbooks. I want to make almost all…if not all…of her recipes and will share my and my family’s opinions with you all. Again, I am excited to do this! I don’t think I have made anything of hers yet that I haven’t liked, so this should be fun! There may be a few things that I will not attempt and if I come across some of those I will try to tell you which recipe and why I chose to not try it.

The first book I am going to work through is Eat What You Love. I have written every Item from that book, and my own book (except my dessert section…it was too long to try to put on my board…lol) on my dry erase boards on the fridge. We will mark off what we make as we make it. This will also help my family see what the options are for when they want to pick what we are having. I absolutely love these boards! The top left one I keep my freezer inventory on. The others have all the recipe items listed on them at the moment, but when there is room, I use one of the smaller ones as my “to do” board. (Note: Please ignore the bottom left…my “men’s to do list”…I couldn’t take if off the fridge, they might think they were done! LOL)

I am super excited to start this! I hope you are excited! Buy your copy of the book, because you will want to try things! <3
