Hillbilly Trash~Paleo Breakfast Casserole

I have debated changing the name of this, because well…I can’t imagine a “hillbilly” eating a Paleo diet…LOL I thought about something like “Caveman Trash”…but you know…haha! (Just being a bit silly.)

This recipe started out as a campfire recipe for camping. My family loved it so much that I adapted it to be made and baked in the oven. While on level 1 and limited on level 2 (of The Wahls Protocol) I technically can have potatoes some, I wanted to find a way to actually get more of my veggies into all my meals. (Potatoes do not get to count towards the 9 cups I am to consume each day.) I also had to edit the “cheese” part of this recipe.

If you are not doing eggs, I imagine you could use unsweetened applesauce, or some other egg replacement. I have not tried it myself, but I think it could be done.

Of course by now you all know I was super excited to find a cheese replacement. I also use Danielle Walker’s Nacho cheese sauce for this recipe. I only did not add the salsa to it for this recipe. Although, I am sure salsa would be a good added flavor to this meal!

I also used frozen riced veggies, because I had some I needed to use, but you certainly could make your own if you wish. This batch had a mixture of cauliflower and sweet potatoes, but I normally would just do cauliflower. So I could count more for my veggie intake.

Also, did you know that you can buy Red Robin’s amazing gluten free seasoning that they have on the table? This stuff is awesome! Just tell your waiter/waitress you want one, and they will add it to your bill and bring it to you before you leave! Or of course use the link to get some! I love this stuff! We use it on veggies, frenchfries, and I use it in place of seasoning salt in a lot of recipes. 😉 (You are welcome!)

Hillbilly Trash Breakfast

FOR CAMPING:  Take an aluminum foil cooking bag sprayed with ghee.  Sprinkle seasoning and put pats of ghee on it.  Open veggies, beat eggs, chop onion and bell pepper.  Mix all ingredients in together.  Pour mix into foil bag and spread out.  Add some salt, pepper and more seasoning; put more pats of butter on top.  Place on pre-heated grill (med. heat) turn bag every 5 min.

AT HOME: Mix all ingredients in a large bowl and use a sprayed 9×13 baking dish.  Bake @ 350* for about 45 minutes.

OR!!!!  Put in 5 sprayed glass single serve dishes.  Store in freezer until ready to use.  I thaw the night before.  Bake at 350* for 30 min. thawed.  If frozen, probably 45 minutes.
