Eat What You Love~Review #7

Before I get into my review today, I need to make a little announcement. The last 2 weeks have been an enormous, crazy, emotional, roller coaster ride for me. It’s a long, long story. Maybe someday I will be able to share it. (It’s not all bad…I know how brains work.) It will all work out the way it’s suppose to, but for right now, I have some things that I need to redirect my focus and attention on. Just trying to get my brain where it belongs is a big part of creating some of the emotional turmoil. God has also shown Himself mightily to my little family in the past couple weeks.

In my ponderings of this scenario, I have decided to take some time off. I am taking a break for all of July and maybe part of August. July for sure. I hope you all will be understanding of this. Part of autoimmune issues, you have to recognize when you need a break and take it. I just need some time to destress, and get my priorities, and focus back where they need to be. <3 Thank you, to those who follow me, I hope you will still be here when I get back! šŸ™‚

I don’t have many items to review. The last couple weeks, had too many “survival” days…where we ate easy meals, or I did create a couple. But I will review what I have so I am current before taking my sabbatical!

Sloppy Joes~page 190
My family has never been much fans of sloppy joes. I am not really sure why, but they just weren’t. However, these! These they will eat! I love these, they freeze well. So easy to make a big pot of this and have plenty of leftovers. I do have to say, I would prefer to eat it over blender bread, or lunchbox bread with dairy free cheese, than over the sweet potato mash. I did try that the first time I made it and wasn’t too crazy about eating it with sweet potatoes. But yes, I make these often. I love how there are veggies hidden in. šŸ˜‰ (apparently I forgot to take a picture of this meal. Sorry!)

Sesame-Crusted Seared Ahi Salad~page 145
OK, first let me tell you…I am NOT a sushi girl. I mentally cannot handle it. And eating this tuna…rare…was not happening. Also, David wanted to grill it instead of me pan cook it. I made him cook it…done. I loved the salad part, but to be honest, I simply was not crazy about the tuna steak. David and the boys loved it, but let’s just say it wasn’t my favorite, nor my choice of fish. The salad part and even the dressing I would definitely do again, though. If you are a tuna steak kind of person, I am sure you would love it. And if you can handle “raw fish” I’m sure you would love it even more. ***shiver***

Shrimp and Sausage Jambalaya~ page 209
This was delicious! Granted, probably not what I should have picked to cook the day I did, because it was one of the hottest days, and this is more like a soup…but I didn’t realize it when I laid everything out. However, it was very good! My men loved it because it was full of meat!
