Eat What You Love~Review #6

I am having a bit of an “off” week…so bear with me. Last week seemed to be a better week, as far as how I was feeling, but for some reason this week I am extra stressed, and having a couple issues. I am working on it. 🙂

I was able to fix more items last week from our book. I will also warn you, that the next week may not have as many, if that’s the case I may skip a week and do a bigger review the next week. I also have more recipes ready to post. But first…this week’s review, from Danielle Walker’s Eat What You Love cookbook.

One-Pan Deconstructed Turkey Dinner~page 226
This was good, however, I need to adjust the baking times. The bake for 50 minutes then check every 10 min. is a little crazy for me…So here’s my adjustment. It’s going to need to bake about 2 hours anyway, so. I would bake it for 45 minutes. THEN add the dressing to the pan (my dressing burnt a bit, so I think it should be added later.) Then bake another hour. THEN start checking it every 10 min until it’s up to temp. Otherwise, it was very good, and a somewhat “quick” turkey dinner”. I meant to take a picture as soon as it came out of the oven, but everyone was “starving” and I forgot! LOL

Sausage-Spinach Skillet Lasagna~page 220
OH!MY!GOODNESS! You guys! This was AMAZING!!! I mean, I do not know what else to say about it. I LOVED LOVED LOVED it! I was concerned that it would be enough for 4 of us…3 being adult men. Next time I will probably double it…make 2, but we didn’t leave the table hungry. It was just “barely” enough for 4 adults.

Chocolate Hazelnut Spread~page 307
I was hesitant on this, because I do not generally care for hazelnut flavor, but I decided to give it a try. Not only was it fun to make, but I actually really like it! Kind of a chocolate peanut buttery flavor. Makes about a pint jar. Just store it in the fridge or freezer. It does get pretty thick/hard, so I would either let it set out for a few min, or scoop a little in a bowl and slightly warm to make spreading a little easier.

Almond Milk~page 308
I ran out of almond milk and happened to have some raw almonds on hand, so I followed her recipe to make my own. It worked out pretty well. I didn’t use the cheesecloth, just my finest strainer, and while it’s good, I probably will use cheesecloth next time. I don’t mind the pulp, but sometimes I would prefer it a little creamier. The flavor is great though. And it was not hard at all! The hardest part is thinking ahead enough to soak the nuts long enough!

Banana-Chocolate-Hazelnut French Toast~page 29
WOWZA! No syrup needed for this tasty breakfast! This was super yummy! Used the Banana Bread from the earlier review, and the above Chocolate Hazelnut Spread. YUMMY! The leftovers refrigerated well, and reheated well in my air fryer on the reheat setting for about 5 minutes.

Fried Chicken~page 188
I was never much of a fried chicken makin’ kinda gal. I did not want that mess! Even this recipe I adapted just a tad. But let me tell you something! This stuff tasted so good, it was hard to believe it was even healthy! Next time I would reduce the amount of salt in the brine. It was just a little much on the salty side. Probably reduce it by 1/2. I also would make a little more of the first breading mixture, bc I ran out on my last 2 pieces of chicken. I also cheated and used the whole egg instead of just the egg white. (I hated to throw the yolks away. lol) But here’s the real kicker! I DID NOT FRY THIS CHICKEN! Instead…I decided to try my brand new air fryer with it. Guys! I am serious! You would never know the difference! My men loved it! I air fried it for 30 minutes, rotating the pans 1/2 way through the time. After the 30 minutes, I flipped the chicken over and air fried for 5 more minutes. Be sure to use a spritzer (not aerosole oils) and spray the pans well, before putting the chicken on them. I have a feeling this is going to be an often requested meal around here!
