Eat What You Love Review #4

This week’s review is not quite as long as last week. For some reason, I revamped more of my own recipes last week than I did trying ones from Danielle Walker’s Eat What You Love book. I plan to post some of those recipes this week. But for today, here is a review of what I did try!

Spaghetti and Meatballs~page 204
Wow! I have never really made meatballs that we really liked. So, I was a little skeptical how this one would go over! But wow…Just wow! These meatballs and this sauce was SOOOO good! My men all approved! This would also make some good meatball subs, if you made compliant “buns”. Also, I used Cappelo’s Fettuccini noodles this time, but I do make Zuggetti…often. Spiralized zucchini is very good in place of “pasta” noodles. I used Rao’s marinara (also found at Costco) for the sauce…So good! Also, these meatballs freeze great! I will make double batches in the future and freeze for quick meals.

Chocolate Milk~page 84
This was surprisingly really good to me! I do have to make a couple adjustments though…as not everything would fit in my blender. I either need to do it in 2 batches and mix them together, or only add 4 cups of the water then stir in the last 2. (I have Pampered Chef’s blender…and I love it!) But either way, this turned out really good. NOTE: It also makes a MEAN iced coffee! Fill a glass 1/2-3/4 with cold coffee and ice, then finish filling with this chocolate milk. YUM!!!!!

Apparently that is the only 2 recipes I used from Eat What You Love last week. I did make her Nacho Cheese, but it is not in this book. I have a couple recipes coming up this week that I used that cheese in…with my own modification, so stay tuned!
