Broccoli Casserole

One of my favorite side dishes at holiday events or any family gathering actually is Cheesy Broccoli Casserole. Especially my Aunt’s recipe. I have tried a couple different things with this one, but the recipe below is my favorite so far. If I concoct something better, you will be the first…well…second to know! 😀 But this recipe is so super easy!

I know a lot of people do not like broccoli, but thankfully I do. Broccoli is a sulfur vegetable, and is loaded with nutritional properties! Another favorite way is steamed. You can choose the steamed endless broccoli at Red Robin instead of fries. 😉 (You are welcome!) And their steamed broccoli is SOOOO good!

Another way I like to fix it, is roasted. We absolutely love roasted veggies around here. I just spray a pan, put my broccoli (and usually other veggies too) on the pan. Spray with ghee, olive oil, avocado oil, or coconut oil. Sprinkle Nutritional Yeast, salt and pepper over. Roast on 350* for about 40ish minutes for sulfer/hard veggies. (If you are doing softer veggies, like squash or zucchini it only takes about 20ish min.)

Aunt Lori’s Broccoli Casserole~DF/GF

16 oz. frozen broccoli, thawed
Daiya Cheese Sauce.
Pour over broccoli.
Toast 1 slice of DW’s Blender Bread from Celebrations, or Nut-Free Lunchbox bread from Eat What You Love. Crumble and put on top.
Bake 375* 20 min.

Now how easy is that!?
