I have struggled for years with food…I like food…no…I love food!😂 I’ve tried different diets, different eating plans… you name it, I probably tried it!
Long story shortened, the week of Thanksgiving 2018, I was diagnosed with an autoimmune disease, Multiple Sclerosis (MS). I cried…all night that night. I thought it was a death sentence. I didn’t want to be a burden to my family…I didn’t want my family waiting on me hand and foot. There were/are a lot of unknowns. All I could see was me being an invalid and not able to do anything.
By the next morning, (mind you, I wrestled all night long with it but,) I got up, dried my tears, and determined to enjoy my life and live it to its fullest. We didn’t allow ourselves or our boys to set around feeling sorry for ourselves with their health issues. We figured out what we needed to do, and we done it. Hard sometimes…very hard, but that’s how it was. (That doesn’t mean I don’t have discouraging moments…I do, but God helps me, I dust off and go on.)
I started researching, researching, researching…I really wanted medicine to be the last resort…not the first. I came across the “Wahl’s Protocol.” Ordered the books and dove right in. I decided I would rather enjoy my family than my food. I joined Facebook pages about the Protocol, I read everything I could get me hands on referring to a healthy way to approach this.
I have been dairy, gluten, and sugar free since January 1, 2019. I started out slowly. Very slowly. Even though it was the holidays, I cut most dairy, gluten, and sugar. But I “weaned” myself off of these things…mostly the sugar. By going slowly I was able to avoid the withdrawal headaches and symptoms that come with cutting everything cold turkey.
I am seeing results.
I am finding very tasty things to replace what I’ve given up, and adapting recipes. I want to share with the rest of you some yummy goodness! I’m even enjoying some of it…most of it! I am enjoying adapting some of our favorite recipes. You CAN win this food fight and still enjoy your food! Don’t wait for a diagnoses! Although, the diagnosis does help keep me motivated! I know how bad I felt at the peak of my last flare up…I do not enjoy feeling like that.
