Eat What You Love Review 2

Since I have several recipes in this week’s review, I will just get right to it! Again, I am working my way through Danielle Walker’s Eat What You Love Cookbook. In no particular order. Just whatever works for us each day. I am also recreating some of our own personal recipes, which you will find posted under the “Recipes” section of the blog.

  • Crispy Nut-Free Waffles~page 237 You guys! These are not only super delicious, but so fun to make! They freeze great, so they are a great make ahead, meal prep breakfast item! So light and fluffy!
  • Banana Bread~page 39 I have never really been crazy about banana bread. If I was going to eat bread, that just wasn’t what I would choose. However, since I am determined to work through this book, I gave it a try. It is great! My husband also loved this bread. Also freezes well!
  • Chocolate Sprinkle Doughnuts page 33 I have made these a few times actually. The first time I cried. I literally cried when I tasted it. It had been so long up to that point since I had had a doughnut. And to have a CHOCOLATE one! These are so good! You almost feel guilty when you are eating it. Like you are eating something you shouldn’t! Again, these freeze well! I freeze them in a single layer on a cookie sheet, then put them in a ziplock freezer bag.
  • I also made the Rainbow Sprinkles ~page 304 for the doughnuts. These are so fun to make! India Tree makes a natural food coloring that I like to use. Also, if you have trouble with your hands, you may want to make these when someone else is home to help you pipe the batter. I have trouble with my hands, (they are still numb) and I needed to let one of my sons help me here. But it is so fun to have guilt free sprinkles to “play” with! 🙂
  • Moroccan Chicken Sheet-Pan Supper~page 210 Ok, I will be honest. While I was making this, I thought, “Oh my! I sure hope this isn’t disgusting. My men are going to choke me.” There are so many different flavors mixed in this that I never in a million years would have put together on my own. BUT! I was pleasantly surprised! It was delicious! Even David was like, ok we need to have this more often! The best part…it’s so easy! Such an easy dinner! I used dates and mangos for my dried fruit, because it was what I had on hand. Also, I used boneless chicken breast, because…again…that’s what I had on hand. If you use boneless breasts, they can probably be added the same time as the fruit, they don’t need quite as much time. But the flavors all melded together wonderfully! I completely forgot to take a picture though, so the picture if of the leftover veggies…LOL (I am not use to taking pictures of my food…working on it!) BTW…roasted dates…are AMAZING!
  • Honey-Mustard Sheet-Pan Salmon page 213 We have had this one a couple times as well. I love sheet-pan meals, because they are so very easy! This is very good! I have also used salmon steaks to make this, since they are cheaper. I do the whole fillet once in a while, because it’s fun, but the steaks work too. You just may need to adjust baking times to keep from over cooking your fish.
  • Cumin Roasted Carrots~page 118 We made these with our Mother’s Day dinner. OH.MY.GOODNESS. These will become a staple side at our house! I LOVED THESE! So so good!
